A brilliant Tomato Pasta Recipe that will bring life to you homemade pasta's and homemade ravioli.

What about using this flavored pasta with your favorite pesto recipe. The possibilities are endless.

I've always been a pasta fanatic and I love all types of pasta but to be honest with you I never really took the time to make fresh pasta. It just seemed too much like baking and I'm a lousy baker.

But since I've started I can't stop.

Don't get me wrong, there are some really great quality dried pasta products out there. But if you have the time and you feel like making it a family event or just a personal chef's project you are going to love a making fresh pasta recipe.

It's a ton of fun.

This one is a good flavored pasta to start with because it's easy and pretty much everybody has a can of tomato paste laying around to use in the basic pasta dough base.

1 cups of all purpose flour, sifted
cup of semolina flour, sifted (You can increase the all purpose flour if you don't have semolina flour)
1 tsp salt
2 eggs
can of tomato paste

Take the can of tomato paste and heat it in a small pan. You want it to be a little warm, not hot.

In a bowl or food processor mix the eggs and Olive Oil and then blend in the tomato paste until it's smooth and consistent.

That mixture is what you're going to place in the well of your sifted flours and salt.

I take a fork and mix in slowly to the flour until it gets to the point where I can dig my hands in and start kneading.

You have to knead the dough for about 10 minutes and don't be afraid to add more flour if it's too wet. Or poke a dent in the dough to add a few drops of water if it's too dry.

There is no real science to this or any Italian cooking. Add a little of this, Add a little of that.

When your basic pasta dough is at the right consistency you can place it in a bowl, covered, and let it sit for about an hour before you start shaping or cutting.

Cutting and Shaping your Tomato pasta

I start by rolling out the dough to about inch thick on a cutting board.
Then I cut the dough into 2X3 inch squares or there about.
Run the dough on the highest setting in your pasta machine 2 times.
Continue to lower setting one notch and run it through each time.

If you made your tomato pasta recipe with all purpose flour don't go too thin. It tears more easily so I suggest a 3 setting.

If you used Semolina flour blended with the all purpose flour then you can set your pasta maker machine to a lower setting like a 2 or 1 if you are making stuffed or filled pasta.

How to use your Tomato Pasta

I used my tomato pasta recipe to make homemade ravioli. I stuffed it with a good quality ricotta cheese and created mini ravioli's. I even got a little adventurous and fried a few. Wow, were they great!

You can make tagliatelli or fettucini and serve it with a pesto recipe or even an Alfredo Sauce recipe. If you have special attachment to your pasta maker machine use it to make creative pasta shapes and make a cold pasta salad!

You can even toss it with Olive Oil and parmigiano and call it dinner!
