Porcini Mushroom Pasta Dough

This porcini mushroom pasta dough is the end all, be all to all great homemade pasta doughs. If you love the flavor of porcini mushrooms you're going to love this pasta dough recipe.

I've been making my own basic pasta dough for some time now. I don't know what to tell you. One day I decided to try it and I was hooked. I've made them all:

  1. Tomato Pasta
  2. Spinach Pasta
  3. Basil Pasta

Porcini Mushroom Pasta Dough Ingredients:

  1. 1½ cups All purpose flour
  2. ¼ cup Semolina flour
  3. 1 tsp Salt
  4. 2 Eggs
  5. 1 teaspoon olive oil
  6. ¼ cup of dried porcini mushrooms soaked in hot water for an hour

Porcini Mushroom Pasta Dough Instructions:

Boil about a half a cup of water in a sauce pan and pour it over the dried porcini mushrooms. Cover and let them sit for about 30 minutes to an hour.

Drain the mushrooms (save the water if you're going to make a porcini sauce or to add water to the dough if it's too dry) and place them in a food processor. Blend until smooth with no large lumps.

Beat the eggs and olive oil in a separate bowl and then add to the processor and pulse to blend but don't make it frothy. Or you can mix it all together with a fork.

Pour that mixture into the well you've formed in the pile of flour and mix with a fork until blended enough to get your hands in there. You're going to knead the dough to the right consistency. Usually about twenty minutes and then set in a bowl covered or in a plastic bag to sit for about an hour.
