Chocolate Pasta
Now That's Decadent!

Chocolate Pasta has got to be the most decadent of all homemade pasta recipes. Anyone knows that when a chocolate attack calls you MUST answer and I couldn't think of a better way to appease both of my additions then to make a chocolate flavored pasta.

But Chocolate is no stranger to Italians where in Perugia, Umbria the Italians have a 10 day festival dedicated to all things chocolate.

It's called the Eurochocolate Festival in mid October and like any festival in Italy, it lasts for days.

10 whole days of CHOCOLATE.

Chocolate ice cream, cookies and cakes
Chocolate lipstick and cosmetics
Chocolate infused cheeses of all kinds
Chocolate flavored salamis and dried meats
Chocolate Wines, Chocolate Olive oils

There is even a contest for the best chocolate hair style.

And of course, Chocolate Pasta.

While you're there you have to stay at the first hotel in the world to be dedicated to chocolate. The Estruscan Chocohotel.

First we begin by making our chocolate flavored pasta dough. Then we create the luscious warm strawberry sauce. I used fresh strawberries seasoned with crushed red peppers for just the perfect amount of heat, cooled to perfection with a dollop of freshly whipped cream.

Let's get started!

Chocolate Pasta ingredients:

1 cups of all purpose flour, plus extra.
cup of semolina flour, sifted (You can increase the all purpose flour if you don't have semolina flour)
1 tsp salt
2 eggs
1 cube of bakers chocolate.
2-3 Tbsp of water
2 Tbsp of sugar if you want it sweet. I did not add it.

NOTE: The cup of water is used to dilute the cubes of bakers chocolate so it can blend into the dough. You probably will not be using all of the chocolate. I used 2 to 3 tablespoons.

Kitchen Tools Needed:

Cutting board
Measuring cup
Fork
Double boiler or a saute pan and small pyrex bowl
Spoon
Pasta Machine

Preparation:

I heated the bakers chocolate in a double broiler. It's simple. Take a sauce pan and bring about an 1 inch of water to a boil. Place a pyrex or heat safe bowl or glass in the center of the pan and let the chocolate melt.

Stir in a little bit of water to thin out the consistency to a pasty texture.

Just as you would any pasta dough you begin by mixing the blended flours and salt together and form a pile in the center of a large cutting board or flat marble or granite counter top. You can read my HOW TO MAKE PASTA page for step by step instructions and pictures!

When you've completed the kneading place in a bowl and cover with plastic wrap and let is sit for at least an hour. You must let it rest or sit prior to putting it in the refrigerator if you're going to store it.

I shaped my basic pasta dough into a fettucini. I thought it would give a nice appearance on the plate with the strawberry and sauce.

Warm and Spicy Strawberry Sauce:

Typically you would think of chocolate as a desert ingredient. But let's keep in mind that some very delicious and incredible culinary experiences with chocolate have included some kind of meat. What about a traditional hispanic meal that includes meat or pork cooked in a mole sauce. A spicy chocolate mixture to die for. Or asado de boda, another Mexican delight of chocolate, orange zest and spices served over pork.

Some even use chocolate rub to season meat before grilling.

You will need the following ingredients for this easy to make chocolate pasta sauce:

1 lb of fresh strawberries, washed and sliced
1 cup of sugar
1 cup of white wine
2 tbsp of crushed red pepper
2 tbsp of butter
1 cup whipping cream
2 tbsp of sugar for the whipping cream

Kitchen tools:

Food processor or whisk
Saute pan
Wooden spoon

Pour the whipping cream into a food processor with the 2 tbsp of sugar and whip until thick. It doesn't take long. Scrap into a bowl and let it cool in the refrigerator.

Wash and slice the strawberries and dry. Melt the butter on medium heat in a saute pan and add the strawberries. These cook quickly so you can add the sugar and the crushed red pepper and splash with the white wine in right away.

Let the strawberries thicken with the sugar and butter as the moisture steams off.

When you're ready to serve the chocolate pasta masterpiece, pour the hot, spicy strawberry sauce over the pasta and dollop with the fresh whipped cream. Garnish with a sprig of fresh mint. Couple it with a Moscato desert wine for the perfect pairing!
