A refreshing Caprese pasta salad recipe is the best way to bring in the spring season. Light, refreshing and delicious.
Have you ever had fresh buffalo mozzarella? There is nothing like it. It's like putting a pillow of tender lusciousness in your mouth. A the tiny versions of these Italian cheese delights are called mozzarella di buffalini and they are the definition of the perfect bite. Or at least part of it.
The rest comes from the fresh basil, the juicy tomato and the of course, the pasta.
You should always begin all of your easy pasta salad recipes by cooking your pasta first. I like to cook it al dente and then immediately remove from the boiling water and rinse in cold water until cool.
This helps to cool the past and stop the cooking process and it also removes the starchiness of the past that you don't want in a cold pasta salad recipe.
Drizzle some of that delicious, unfiltered olive oil and mix until coated. Now you can set the pasta in the refrigerator until the rest of the ingredients are prepared.
Take the fresh and crisp tomatoes and dice them into decent, bite sized cubes and set aside.
Now take the basil leaves, about four to five leaves at a time, and lay them on top of each other. Tuck the leaves over into a small basil roll and begin slicing. This will create little strips of basil from each basil leaf.
Drain the fresh buffalo mozzarella and set aside. I like to save some of the juice to add to the cold pasta salad flavor. Mmmmmm, so good.
Remove the pasta from the refrigerator, it should be nicely chilled by now, and add all the ingredients together to create an amazingly fresh and easy pasta salad recipe.
If you can stand the heat, toss in some crushed red pepper for a Southern Italian pasta flavor.
