Zucchini is one of my favorite Italian vegetables. It tastes so good no matter how you make it. Steam it, fry it, grill it! It's so easy to prepare and it has such a great color and appearance.
You know you eat with your eyes first and then your tummy!
For this vegetable pasta recipe I cut the zucchini in little inch slices and put saute them in a pan with olive oil so the become slightly browned on each side. This makes the zucchini tender and flavorful.
1 lb. of Rotini Pasta cooke al dente
4 cups zucchini cut into inch slices
2 cups grape tomatoes cut in half
cup chopped Italian parsley
2 cloves of crushed garlicOlive Oil
Salt & Pepper to taste
What could be more simple?
That is typical Italian cooking. Taking simple ingredients and not a lot of them. Putting them together to create something really wonderful.
Boil a water in a large pot with salt and cook your pasta al dente.
In a saute pan cover the bottom with a light layer of Olive Oil and heat on medium low.
When the oil become hot, space out the zucchini one layer in the pan. Don't overlap or the zucchini will not brown. Cook on each side for about 5 minutes.
In the meantime cut your grape tomatoes in half and set aside and chop the Italian parsley.
When the zucchini is done remove from the pan on a separate plate.
Drain your pasta.
Add more Olive Oil to the pan and reheat.
Crush the garlic cloves into the pan.
Add the pasta, salt & pepper, chopped Italian parsley and toss quickly to coat the pasta.
Now add the zucchini and the tomatoes and toss.
You can serve with this vegetable pasta recipe with parmigiano but it isn't necessary.
However, a glass of white wine and crusty bread is!
