It's one of my Quick chicken recipes that won't break the budget but will taste like you're eating at a 5 star restaurant.
The freshness of the spinach and the sweetness of the little grape tomatoes perfectly marry with the slightly salty flavor of the Locatelli and create a masterpiece combination of flavor.
And who doesn't like Chicken and pasta recipes?
I know I always talk about quick and easy family meals when I talk about chicken and pasta recipes and that's because it's so affordable and who isn't concerned about that these days?
You can use it with almost anything and it adopts the flavor so well. I use Chicken breast in this recipe but don't get me wrong, I am a dark meat lover so what ever you want to use work well.
You can easily feed a family of 6 with this recipe. Add a salad and call it dinner. And it's healthy too!
I used Trumpet pasta for this recipe but there is no reason you can't use Penne or a different pasta shape.
1 lb Trumpet Pasta or Penne Rigate
1 lb Chicken Breast cut into 1 inch cubes
2 cups freshly grated Locatelli
1 pkg Spinach
1 1/2 cups Grape tomatoes left whole
3 cloves garlic thinly sliced
1/2 cups White Wine
Olive Oil
Cooking Hint: If you're using chicken breast this it the way to slice it into cubes the easy way.
Heat Olive Oil (enough to coat the pan) on medium heat, then add garlic and immediately lower heat to med-low heat.
Occasionally splash white wine to keep the garlic tender. Saute until translucent.
Turn up heat to med-high an add the Chicken Breast and continue to stir.When Chicken is cooked tender add the grape tomatoes whole and mix with the Chicken.
After making this Chicken Spinach pasta, a Chicken Alfredo recipe will be a breeze.
