Marcella Hazan moved to the United States in 1950 as a newly wed to her husband Victor Hazan.
Victor played a big part in her culinary achievements. Firstly by being her inspiration. Marcella never cooked a thing as a child or in her young adulthood. Her studies lead her to become a biochemist and later a short career in dentistry. Funny how her life evolved into feeding the mouth and soul rather then repairing it.
Not only was Victor her inspiration to learn to cook but he as written every word in all of Marcella's Italian cook books and in her most recent autobiography, Amarcord: Marcella Remembers.

She started her culinary career by teaching American's how to cook Italian food in her apartment in New York City. When Julia Child befriended her her popularity grew. She opened her School Of Classic Italian Cooking in 1969.
She spent much time in her early married years learning how to cook to please Victor. Regular calls to Italy to get recipes from her family helping her along the way. In that she exposed American's to a new concept of Italian Food much different to the Spaghetti and thick red sauce concept most had at the time.

My favorite of all her Italian Pasta recipes is her rendition of the traditional bolognese sauce recipe. She uses just a touch of cream.
