Tomato Soup With Pasta

A rich tomato soup with pasta. The ultimate in comfort food! A bowl with a chunk of crunchy Italian bread and you've got a meal, a memory and a warm belly.

My perfect comfort food is a bowl of tomato soup and a grilled cheese sandwich and because I love my pasta, in case you couldn't tell, tossing in some orchetti pasta is a must.

The thick sweetness of the San Marzano tomatoes, that I make sure to use, are just the right added punch of flavor.

Choose a quality brand of canned tomato.

Hint: If you want to make a super amazing grilled cheese sandwich try using a ciabatta bread. It's nothing like you've ever had. What ever cheese you use in the center create added flavor by pressing freshly grated parmigiano cheese on the outside of the bread before you fry the bread. It's grilled cheese nirvana.

Ok, back my tomato soup recipe. Here what you need.

Ingredients:

  • 1 15 oz can of San Marzano tomatoes
  • 1 15oz can of Cannelli beans with juice
  • 4 cloves of garlic, sliced
  • 1 medium onion chopped into large peices
  • 1 quarts of chicken stock
  • pound of orchetti pasta
  • 1 sprig of fresh rosemary
  • splash of red or white wine
  • freshly grated parmigiano
  • Salt and fresh ground pepper
  • Olive oil

Cooking Instructions:

Use my cooking pasta guide to make your orchetti al dente. Always cook your pasta al dente and keep it separate when you make any Italian soup recipe.

Coat a saute pan with olive oil and heat on medium.

Toss in your onions, garlic and stir until translucent and tender.

Splash in your wine and saute until the wine has evaporated. Now add your rosemary sprig and stir for one minute.

In a large pot add the San Marzano tomatoes, the onion and garlic mixture, the canned cannelli beans, the chicken stock and the salt and pepper.

A little Italian soup recipe trick is to add a rind of parmigiano to the tomato soup while it simmers. It adds flavor to the broth.

Allow to simmer for thirty to forty minutes stirring occasionally.

When you're ready to serve, put the pasta into the bowl and spoon the tomato soup over the pasta. Drizzle with olive oil and grate fresh parmigiano into the bowl.
