A great tomato sauce recipe begins with a great tomato!

When I started this site I discovered that a bunch of people were turning to me, ME, the pasta girl for recipes for their pizza's. I thought, but I'm the pasta girl! But then it occurred to me that if you're making a great tomato sauce recipe you're making a great tomato sauce for pizza.So here are my top three sauce recipes!
Always use a good quality Olive Oil and I like fresh herbs instead of dried but you can you either one you like.
INGREDIENTS:
1 15oz can of San Marzano tomatoes blended in the blender
1 Tbs tomato paste (optional)
1 shallot minced
3 cloves of crushed garlic< br> cup of red wine
1 Tbs Olive Oil
4 fresh basil leaves
1 tsp oregano (optional)
1 tsp salt
PREPARATION:
Heat the Olive oil in a pan on medium heat and add the crushed garlic and shallots until translucent. Crank the heat up to medium high and splash in your red wine and let it evaporate.
Now add your blended San Marzano tomatoes and let it simmer on medium low for some time. You want the water to boil off and reduce the sauce so it's nice and thick for your pizza. This is also a good time to add your dried spices if you choose dried.
Just before pulling it from the heat add fresh herbs, if you used fresh, and stir.
Always let the sauce cool before spreading a nice thin layer over your pizza dough.
This is a fresh, NO COOK, tomato sauce recipe to use for your pizza. This is a great sauce to use for a pizza you intend to use fresh uncooked toppings.
For instance:
Arugula
Freshly sliced Prosciutto
Fresh chopped tomato
Fresh Basil
Fresh buffalo mozzarella
All of these ingredients you can put on top of a pizza uncooked and they are Fabulous!
INGREDIENTS:
15oz can of San Marzano tomatoes
3 cloves of garlic
4 fresh basil leaves
1 tsp salt
cup of freshly grated parmigiano cheese
3 Tbs of Olive Oil
PREPARATION:
Put the first 4 ingredients of the pizza sauce recipe into a blender and blend until smooth. Then pour into a bowl and add the parmigiano and the Olive Oil and stir until blended.
Place in the refrigerator covered until cool. This also allows the flavors of the spices to blend together.
Spread this on your pizza dough just as it is and allow to cook with the dough. The aroma of the fresh tomato sauce will fill the kitchen and add to the fresh toppings you plan to use for your pizza after you pull it from the oven.
