I love lasagna! It's so Old World Italian Food and what we as food lovers imagine when we think of Italian pasta recipes.

So pour yourself a glass of your favorite Italian wine, a must in every chefs kitchen, and let's begin your masterpieces.

Start off by using 9x5x3 inch baking pan and make a mini lasagna if you'd like. But beware, you are going to want a second helping. The ideal size lasagna pan for me is 3 inches deep. Perfect for a piled high Eggplant lasagna recipe. Can you picture that?

The key to any easy lasagna recipe is all in the prep work and the pasta you choose. Use a quality pasta. It makes all the difference. Be sure to cook them Al Dente so they don't fall apart or over cook when you bake them.

Make sure when you boil the pasta you don't over stir them. That's how the break apart. I put them in one at a time and stir only a couple of times until they re-boil. Then I leave them alone. When done rinse in cold water and drizzle with olive oil. That's the key.

Try making your own fresh pasta with a pasta machine or use one of my homemade pasta recipes.

Always use fresh local ingredients which is the Italian way. If you're making a Zucchini Lasagna make sure to pick ripe, bright green zucchini. Same goes for any Vegetable lasagna. Making it fresh is making it delicious!

Traditionally you use a Marinara sauce recipe in creating your lasagna but I have a Chicken Lasagna with an Alfredo sauce you will go crazy for!
