Herb Pesto Hold The Nuts

Herb pesto is definitely something you're more likely to find in the Northern regions of Italy. That's where Italy belly's up to France and in France they make a Pistou which is ultimately a pesto recipe with no nuts.

Of course you have to be a little nuts when you're an Italian!

This is an all Herb pasta sauce recipe that has the essence and flavors of Italy. Basil, Parsley and garlic with the richness of Olive oil bringing them all together.

It's very easy to make and if you love the flavor of a pesto recipe but not so crazy about the nuts, well this is the pesto recipe for you.

Ingredients:

Always use fresh herbs. This pesto isn't a pesto unless it's fresh.

1 bunch of Italian Parsley
1 bunch Basil leaves (about 10-15 leaves)
cup of blended sage and thyme
4 cloves of garlic
1 cup Olive oil
Salt to taste

Wash and dry the herbs thoroughly.

Normally I like to blend, chop or mortar all the herbs first before adding the Olive Oil.

Especially if you're using a food processor.

Sometimes blending the oil makes it cloudy. I like pesto to be very smooth so I blend it a long time and then when I'm ready I add the Olive oil and blend a few pulses to mix it all together.
