That's why it's so important to use a real homemade chicken stock recipe when you're making any chicken soup. Canned broth just isn't the same. Here is my recipe for a homemade chicken stock. Make a large batch and freeze it in smaller containers for future use.
2 cups of homemade chicken stock
cup of uncooked fideo pasta shape
cup of chopped Italian parties
4 bagette croutons
Olive Oil to drizzle
Freshly grated parmigiano
Slice four peices of bagette or french bread cut into 1 inch thick slices. Brush both sides of the bread with olive oil and toast until golden brown and set aside.
Add the fideo pasta into the chicken broth. This thin pasta shape is so tiny it will cook quickly. Cook until al dente.
Ladel out into 4 soup bowls and drop the crisp bagette crouton in the center of the soup. I like to sprinkle with chopped parsley and grated parmigiano and then drizzle with olive oil.
