Parma Las Vegas

Parma Las Vegas is another INCREDIBLE find. You gotta love Yelp. One person mentioned Uni linguini and I said, "We're there!".

So Jeff and I were driving across Vegas into Zion, Utah which by the way is amazing, and the car broke down. We shuttled back to Las Vegas where we could fly home until the car was repaired.

Not being a huge fan of the casino's I was hoping to find a diamond in the rough somewhere on the outskirts of the strip. Jeff LOVES yelp and so do I. It is a great site to go to if you are in a strange city but have high foodie requirements. Sound familiar?

Of course Jeff know's my passion for pasta and read the reviews on PARMA Las Vegas, which is a pastavino (not a real Italian word) deli just outside of the strip area in Las Vegas.

At first they talked about deli sandwiches etc and I wasn't so excited. Then someone mentioned a Uni linguini.

Ok talk about taste bud nirvana! I told him to look no further.

We walked into Parma Las Vegas, a very unassuming deli type "joint", and I expected a guido guy to come over to take our order.

An handsome young Italian man whom I had the opportunity to use my unpracticed and shameful Italian on came to take our order. Of course I knew exactly what I wanted. Uni linguini!

This is not your typical Italian pasta recipe but it was an party in my mouth. Simple, fresh, delicate and amazing. The sweet fresh Uni, and yes it was so fresh, dressed the linguini perfectly and what an amazing display of color. I wiped the plate clean and if I could have gotten away with it I would have licked the bowl. TRUST ME, I would have.

I appreciate restaurants like Parma Las Vegas and the way that chef's like chef Marc take the time to put together such a unique and enjoyable meal.
