It's tons of fun and the flavor makes such a big difference in your meal.
Put the ½ cup of roasted garlic in a small bowl and mash with a fork.
In a bowl mix the eggs and olive oil and then blend in the roasted garlic paste until it's smooth and consistent.
Mix the flours and salt together in a bowl and set in the center of a large cutting board. Create a well shape in the center of the flour.
Pour roasted garlic and egg mixture into the center of the flour well. I take a fork and mix in slowly to the flour until it gets to the point where I can dig my hands in and start kneading.
You have to knead the dough for about twenty to thirty minutes and don't be afraid to add more flour if it's too wet or you can poke a dent in the dough to add a few drops of water if it's too dry. There is no real science to this or any Italian cooking. Add a little of this, add a little of that.
When you've completed the kneading process it's time to let is sit. Place the basic pasta dough in a bowl and cover with plastic wrap for about an hour.
This is a good time to pour a glass of wine.
I start by rolling out the dough to about ½ inch thick on a cutting board. Then I cut the dough into 2X3 inch squares or there about. Run the dough on the highest setting in your pasta machine 2 times. Continue to lower setting one notch and run it through each time.
