Italian Shrimp Soup

An Italian shrimp soup with pasta is just what this slowly creeping upon us, winter weather is calling for. Sweet, tender shrimp reminding us of sunny days and the warm broth to sooth our belly’s. Sometimes the simplest of things taste the best. This pasta soup recipe doesn’t take much time or ingredients. Simple and fresh, it’s what Italian cooking is all about.

Italian Shrimp And Pasta Soup Ingredients:

  1. ½ lb of fresh shrimp, cleaned, shelled & cut into bite size pieces
  2. 2 cups of homemade fish stock recipe
  3. ¼ cup of uncooked anelletti pasta shape
  4. ¼ cup of chopped Italian parsley
  5. olive oil to drizzle
  6. 1 teaspoon tomato pasta
  7. Salt and pepper to taste

Shrimp And Pasta Soup Preparation:

Bring a pot of salted water to a boil. Enough to cook the small amount of anelletti pasta. Add the pasta before you begin the rest of the instructions. Cook until al dente. Then remove from the water, drizzle with olive oil portion out into bowls until your complete the following steps. Now bring your fish stock recipe to a rapid boil and the succulent shrimp that has been cut into bite size pieces. It only takes a minute or two for them to cook.

Remove from the heat and toss in the salt and pepper and the parsley. Stir together and ladle over the pasta in the bowls. HOLD THE CHEESE PLEASE!

Try not to serve parmigiano, or any cheese, with seafood. It is an insult to the chef and it hides the flavor of the delicate and fresh fish. Now…
