Pick out the ripest tomatoes you can find. It's ok if they are a little soft. The skin peels off easier if they are.

Begin by angling your knife to remove the core but just where the stem attaches. You don't want to core the tomato like you would an apple.

Then using a very sharp knife remove the skin from the tomato. Stay as close to the surface of the tomato as possible to save as much of the meat of the tomato as possible.

After you skin the tomato, cut the top portion off the tomato and squeeze the seeds out. The seeds are the most bitter part of the tomato so squeeze out as many as possible.

Now you can place all of the tomatoes into a food processor and blend to a smooth consistency.
