Heat 1 T olive oil in a deep pan
Add 1/2 small red onion diced
Add 3 garlic cloves sliced
Add 2 slices prosciutto diced
Cook until onions are soft
Add four fresh basil leaves
Add 2 16 ounce cans of fire roasted tomatoes
Add 2 T tomato paste
Add 1/2 cup red wine (I use Tempranillo)
Simmer 10 minutes.
Blend using an immersion blender(you can also use a food processor to blend the tomatoes with the sauteed onions, garlic and proscuitto before cooking the ten minutes)
Cook down until desired consistency.
We serve this on fresh pasta with some freshly grated parmesean
Next will try poaching some chicken breasts while the sauce cooks.
